There's nothing like a refreshing summer salad on a hot tropical day. Though I don't use them very often, I just love fruits in my salad! Packed with vitamin C and healthy fats, this salad is just what I needed for lunch.
Quick, easy, and super yum. What else do you need to brighten up your day? Though it will still take a few months before we open the coffee shop and food health cafe, I can't wait to share my yummies with the world. Cambodia and the many expats living here are in need of some places to go for a healthy salad.
While in Belgium it wasn't hard to find a decent place to go for a healthy salad for lunch, here in Kep and Kampot (Cambodia) salads are very scarce! Strange for such a hot tropical country, right. Salads are my favorite on hot days like this!
AVOCADO ORANGE SALAD WITH SESAME MUSTARD DRESSING
INGREDIENTS (serves 2)
For the dressing
2 tbsp extra-virgin olive oil
1 tbsp apple cider vinegar
1 tbsp mustard
2 tsp sesame seeds we used black sesame seeds
1/2 tsp garlic powder
Black pepper and sea salt to taste
For the salad
4 cups salad greens of your choice
1 big avocado, chopped
2 oranges, peeled and cut into slices
1/2 cup bell pepper, chopped
2 tbsp dried goji berries (optional)
DIRECTIONS
- To make the dressing, combine ingredients in a small bowl and whisk until well combined.
- Combine salad ingredients in a bowl. Toss to combine and drizzle with mustard dressing.
