Yesterday I told you how I got 10 lbs of cherries from my neighbors cherry tree and how this proposed the question of just what to do with them all. I had some time free this afternoon so I decided to try out a quick and easy recipe for a cherry pie. This was my first time trying this recipe but it looked simple enough to knock out quickly.
Seven ingredients including the cherries, how much easier can you get.
Mix
1/4 cup butter
1/4 cup brown sugar
1 teaspoon vanilla extract
3/4 cup all-purpose flower
3/4 cup rolled oats
3 tablespoons water
You will get a lump like this when it's fully mixed, (don't be afraid to use your washed hands).
Spread the mixture out in a 9 or 10 inch pie plate. Put a little aside for later.
Take 2 1/2 cups of fresh pitted cherries and mix with 1/2 cup of white sugar.
Pour the cherry and sugar mixture into the crust. Use the extra crust you put aside on top of the cherries however you like.
Then bake at 425 f / 220 c for 14 minutes or until the crust starts to brown.
The final result. Smells great and I'm sure it's going to taste great to. It came out a little watery but as it cools it should firm up somewhat. If I try this recipe again I might add some dry oats to the cherry/sugar filling to help soak up the extra juice as it bakes.
