Mouthgasmic Food Formulas: Easy Creamy Broccoli Soup

Today, we want to share an excellent food formula for EASY CREAMY BROCCOLI SOUP:


INGREDIENTS:
2 onions, chopped
1 pint of mushrooms, chopped
4-6 carrots, chopped
1 heart of celery, chopped
3 pints heavy cream and/or half and half
6 cups water
1/4 stick butter
4-8 cloves garlic
10 sprigs Thyme
3 sprigs rosemary
1/4 cup chopped lemon balm (optional)
1/4 teaspoon Nutmeg
1/2 tablespoon salt
1/2 lb brick cheddar or other mild to medium sharpness cheese
Pepper to taste


METHOD:

Get your soup pot nice and hot, medium high heat, and then add the butter. While it is heating, chop your onions into 1/4 inch pieces. Once that is melted and spread evenly over the bottom of the pot, add in your chopped onions.


When the onions smell good, add celery.



Add carrots and cook a few moments, then add mushrooms. 



Add cream and water when the mushrooms and onions have browned.



Bring the soup to a boil. While it is heating, chop herbs, garlic and broccoli.


Once the soup is boiling, reduce the heat to medium and add the garlic, herbs and 1/2 of the broccoli. 



Give it about 5-8 minutes for the broccoli to soften. Then use your immersion blender to blend up all the big chunks. Blend until your soup is as blended as you want. 



Then, add in the other half of the broccoli. Now you have a rich, creamy soup base with some nice big hunks for texture.



Add in the nutmeg and salt. Add more salt and pepper to taste.



Grate some nice cheese and serve each bowl topped with cheese, which will quickly melt into the soup.
