Today's Sustainable Feast in the Garden of Eden

It's another blessed day in the Garden of Eden, and we are sharing another blessed feast!

Once again we have more free, sustainable, delicious, nutritious food with more than enough to share!! We are following an anti-candida cleanse, so our diet is focused on fresh whole fruits & veggies, leafy greens, root vegetables, and squash. Thankfully, we love fruits & veggies - especially when we grow it ourselves!!

We had a really lovely meal tonight with fresh mixed veggie salad, steamed broccoli & cauliflower, sautéed zucchini and onions, mashed potatoes, and sautéed peppers.

These fresh, simple elements lend themselves beautifully to a bit of plating creativity! We chose to layer the mashed potatoes with the sautéed peppers for a pretty presentation and delicious flavor combo.

We fired up the handmade rocket stove, using trash-salvaged wood of course, to cook this meal in our outdoor kitchen as the sun set this evening. The September air is turning cooler, the birds and bugs were chirping away, and the scent of firewood filled the air!

We made a large pot of yummy boiled potatoes with onions and fresh herbs.

When they were fork tender, we mashed them up for some hearty, comforting, vegan mashed potatoes! Did you know potatoes have lots of vitamin C??  They also have B vitamins, potassium, copper, manganese, phosphorus, and fiber.

We have lots of bright green zucchini lately! These beauties also have lots of vitamins including some Bs, A, & C, as well as fiber, protein, iron, magnesium, phosphorus, potassium, zinc, copper, and manganese.

Oh yes, check out all those trace minerals and health enhancing vitamins!! Good health can be so delicious!!

The bright, somewhat sweet peppers have even more vitamin C as well as beta carotene, and they add a lovely earthy freshness especially when mixed with the starchy potatoes.

We really enjoy cruciferous veggies like broccoli and cauliflower - did you know they're related to cabbage and kale? There is so much goodness in these lovely gifts from nature! A plant based life is peaceful, healthful, and super delicious!

In case you are wondering, we are seeing fast & wonderful results even after just a few days of eliminating sugar, meat, wheat, and dairy from our diets and building the foundation of our eating from fruits and veggies. Check out some of the results from our anti-candida cleanse here!

Food is important and we hope to inspire people to really take time to eat, enjoy it, and share it with someone you love. We also hope to inspire more and more sustainable practices in regards to food.
