While I was busy capturing the photo shoots of this egg noodles dish, the sun was graciously radiating through the window ~ throwing some magnificent rays Β β¨ π across the food.
With the weather so bright, with the beautiful blue skies smiling so happily, with the sun setting so late at night, the environment very welcoming, the trees budding new leaves, the green grass sprouting out graciously and the birds singing out melodious tones - just name them ~ ~ ~Β
C'mon tell me what not to love and admire about this beautiful weather? Personally, I must attest that there is none and in my own little way of enjoying this beautiful sunny weather, I thought it wise to prepare some delectable egg noodles that I can relax over for lunch. An ideal meal for lunch I must confess!
The moment I saw a packet of egg noodles lying around in the cupboard, I knew right away that these noodles will make a perfect meal for lunch. I believe that I made the right decision because transforming this packet of egg noodles into a saucepan of delicious egg noodles was just amazing.
The addition of some thinly cut fresh chives, sweet peppers, onions, black peppercorn, and a little bit of flavourful spices made the meal cooked up tall, non-sticky and really nice. The ingredients combined so easily that the dish became ready within 15 minutes. This is indeed a brilliant way of fixing a quickie lunch for a busy afternoon.
This egg noodle dish turned out to be a WINNING ONE! π π π Β Easy to prepare and yet an amazing result!
The recipe couldn't have been any easier and the final result couldn't have tasted any better than it did. Well, I adopted my mum's all-time favourite sweet pepper sauce for this recipe and I am glad I did. So I can assure you that this meal is truly a rich, savoury and spicy one to comfort your stomach and quench your hunger on a beautiful day.
Aside from using your favourite herbs and spices, you can as well complement the dish with oven roasted chicken, spicy grilled croaker fish, beef barbecue or even an omelette. Also, I used only sweet long red peppers but you can equally use bell peppers or tomatoes to prepare it. So feel free to use up any ingredients you deemed right and no doubt the outcome will still be amazing.
For this palatable dish, you will need:
Β½ cup water
Β½ tsp. salt
30ml olive oil
300g egg noodle
1 chicken stock cube
ΒΌ cup of chopped onions
1 tbsp chopped fresh chives
Β½ tsp dried coriander leaves
1 cup of crushed sweet red peppers
