What a marvelous cake. I would like to have this tried. One of my favorite version of cheesecake is this New York cheesecake version. I think the crust to filling balance is a bit strange. :-) Sure, it is a record cake.
The details now:
This gigantic cheesecake was made in September 2013 by Philadelphia Cream Cheese in New York for the Cream Cheese Festival. The cake had a total weight of 3130 kg. The cake was in diameter 2,30 meter and 78 cm deep.
There were not enough people to eat this cake. The leftovers went to local charities. Great, that nothing was thrown away.
Unfortunately, there is no recipe available. I will try to estimate this:
Ingredients
Crust
- 9,5 kg butter
- 1,5 kg sugar
- 15 kg biscuit
Filling
- 5400 x 300g pack Philadelphia cheese, or other full-fat soft cheese
- 450 kg golden caster sugar
- 180 kg plain flour
- 11 kg vanilla extract
- 1800 x finely grated zest of a lemon
- 16l lemon juice
- 5400 large eggs, plus 1 yolk
- 1800 x 284ml carton soured cream
