Leftover oatmeal got you down for the last time!

Leftover oatmeal breakfast cookies are here with a new lease on life.

Not sure about you, but I often make too much oatmeal and end up throwing it in the trash. One morning I decided to put an end to this tragedy. Turn that leftover recipe into hearty and wholesome oatmeal breakfast cookies. What?! Cookies for breakfast?

No need to adjust your screen. Yes, cookies for breakfast.

These aren't your ordinary, sugar-filled, nutrient poor, and artificial cookies though. These are loaded with nutrition, like whole wheat flour, coconut oil, flaxseed meal, chia seeds, maple syrup, cinnamon, bananas, and of course, oats! A delicious way to fill your tummy before heading off for your big day. These breakfast cookies are generously sized too, so you can literally grab one and be out the door! Now that I've figured out how to save our leftover oatmeal conundrum, I may never let oatmeal go to waste again!

Here's how to make your own Leftover Oatmeal Breakfast Cookies!

Recipe yields 18 generously sized cookies

Ingredients

(Wet)

  • 2 cups cooked oatmeal
  • 1 T vanilla extract
  • 1 T ground cinnamon
  • 1 large ripe banana
  • 1/4 cup maple syrup
  • 1/2 c granulated sugar
  • 2 eggs
  • 1/2 c unsalted butter, melted
  • 1/3 c melted coconut oil

(Dry)

  • 1 cup whole wheat flour
  • 1 1/2 cup all purpose flour
  • 1 t baking soda
  • 1 t baking powder
  • 1 t salt
  • 1/4 c flaxseed meal
  • 1/4 c chia seeds

Directions

  • Preheat your oven to 350°F
  • Combine all of the wet ingredients using a blender or hand mixer (or just stir it all up by hand!)
  • Combine all of the dry ingredients in a medium bowl.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Allow to sit on the counter for about 15 minutes to allow the chia seeds and flaxseed meal to absorb some liquid.
  • Dollop onto a lined or oiled baking sheet.
  • Sprinkle the tops with a mixture of ground cinnamon and sugar (optional).
  • Bake approximately 12-15 minutes until lightly browned.

These are amazing with a cup of coffee and some fruit. They are hearty and filling, and full of good-for-you ingredients. In addition to reducing waste of perfectly good oatmeal, these breakfast cookies are a delicious and nutritious way to start your day.
