It's Independence Day here in Mexico, not that Mexican's need a reason to celebrate. We went out to run some errands and couldn't help but notice all the Mexican themed stuff around and people dressed to party, so I decided to make apple empanadas, my spin on a local favorite.
What I Used
Dough
3 c all purpose flour
2 90g sticks of butter, chopped
2 egg
1/3 c sugar
Ice water
Filling
4 Apples, peeled, cored and chopped
5 T butter
1/2 c sugar
1 t cinnamon
How it's Done
- I started the filling first, by preparing the apples and adding them to the pan with the butter, melted and heated to medium heat. Fry those until soft.
- When soft, add sugar and cinnamon and remove from heat while stirring.
Combine butter and flour in a bowl until crumbly.
Add the eggs to the flour and butter.
Add water until it comes together.
Refrigerate for a half hour, then roll to a quarter inch thick and cut into circles. I used somewhat small circles so they ended up relatively small, two to three bite pies.
Fill with a little filling, then crimp the edges closed.
Complete until they're all done, then brush with an egg wash and bake at 350 degrees for 20 minutes.
You can use all sorts of fillings in these, I just went with apple because I like them that way. These are also really good with banana.
