I'm stuck on goat cheese and this cake is just a tribute to that. I went for a classic plain goat cheese cheesecake...if such a thing even exists. It just provides an excellent base for all sorts of toppings from berry sauce to caramel.
Ingredients
400 g natural goat cheese
3 eggs
1/4 c greek yogurt, plain
1/4 c caramel sauce
1 c sugar
2 t vanilla
Marias cookies
4 T butter
Start by crushing the cookies in a food processor, then adding the melted butter. Press this into a springform pan and set aside.
Combine the rest of the ingredients with a mixer until smooth.
Put the pan in the instant pot, I set a ramekin under it to raise it to allow it to fit better.
I make a mold of sorts with parchment paper....
And fill it up. Turn on manual settings for 29 minutes high pressure. Allow to natural release for 8 minutes before opening the pot and removing the cheesecake.
Let it chill overnight before serving and serve chilled with your favorite toppings.
