Steak, Spinach and Cheddar Tacos Recipe and Food Photo Shoot

When in Mexico, eat tacos. One thing you won't find here is the style of tacos we've grown accustomed to in the United States. In fact a lot of Americans considered Taco Bell authentic before coming here and have been disappointed to find they cannot get their typical tacos here unless made by a gringa, like me. These are steak tacos seasoned Mexican American style with cheddar cheese and spinach. A bit of a twist on what I make on the regular.

Ingredients for two people

Steak, about 200 grams sliced into small pieces
1/2 c taquera salsa pictured, I use a salsa with a smoky flavor profile
1/2 c water
2 t garlic powder
1.5 t salt
1 t cumin
1/2 t paprika
1 t onion powder
6 T butter
Half a bell pepper, sliced
1 shallot onion sliced
4 cloves garlic sliced
100 g cheddar cheese, shredded
handfuls of spinach, sliced

  1. Slice the beef into small pieces. I bought milanesa steak which means it's already sliced thin making my chopping job faster.
  2. Add half the butter to a pan and allow it to melt, then add the meat. Cook until brown.
  3. While the meats cooking slice up the onion, garlic and pepper and put into a pan with the other half of the butter on low and sautee until soft.
  4. When the meats brown, add the water, salsa and seasonings and stir. Allow to cook until most of the water cooks out then turn off the heat.
  5. Grill tortillas in butter on each side then top with cheese, meat and then spinach. Of course follow with favorite salsas or hot sauces and serve.
