Why this recipe for Six Week Healthy Challenge? #sixweekhealth  (It’s a contest hosted by @healthsquared in order to motivate us to do something about our health. )

  • -  You get your fiber (chia helps your intestinal transit)
  • - You get the protein and it’s VEGAN. (I mean the coconut. Besides of being a healthy fat, coconut it’s also a good protein source for you)
  • - The raspberries contains antioxidants and that’s it.
  • - Being vegan, it’s easier to digest.
  • - Also, it’s a good thing to start your day with something healthy.

Here is what it’s look like:

Here are the ingredients:

  •   - 1 cup of coconut milk (Homemade Coconut Milk recipe here
  • - ½ cup raspberries
  • - 2 Tbsp chia seeds
  •  - Honey if needed
  • - Fruits for topping (any fruit you have near by)

  Method:

Either if you buy coconut milk, or use some homemade coconut milk, it’s fine. But if you choose to buy it, then my advice is to look for a good source of organic coconut milk. What you have to do it’s simple:

  1. Mix the fruits with the milk in a blender or just simply use a spoon.
  2. Choose a jar or a glass and pour the mixture in.
  3. Add the chia seeds and honey .
  4. Start combining all the ingredients or if you choosen a jar, then put the lid and shake it.
  5. You have to wait at least 3-4 hours or put it in the fridge overnight
  6. Cut some fruits if you want or have.  I used some fresh figs.
