Why this recipe for Six Week Healthy Challenge? #sixweekhealth (It’s a contest hosted by @healthsquared in order to motivate us to do something about our health. )
- - You get your fiber (chia helps your intestinal transit)
- - You get the protein and it’s VEGAN. (I mean the coconut. Besides of being a healthy fat, coconut it’s also a good protein source for you)
- - The raspberries contains antioxidants and that’s it.
- - Being vegan, it’s easier to digest.
- - Also, it’s a good thing to start your day with something healthy.
Here is what it’s look like:
Here are the ingredients:
- - 1 cup of coconut milk (Homemade Coconut Milk recipe here)
- - ½ cup raspberries
- - 2 Tbsp chia seeds
- - Honey if needed
- - Fruits for topping (any fruit you have near by)

Method:
Either if you buy coconut milk, or use some homemade coconut milk, it’s fine. But if you choose to buy it, then my advice is to look for a good source of organic coconut milk. What you have to do it’s simple:
- Mix the fruits with the milk in a blender or just simply use a spoon.
- Choose a jar or a glass and pour the mixture in.
- Add the chia seeds and honey .
- Start combining all the ingredients or if you choosen a jar, then put the lid and shake it.
- You have to wait at least 3-4 hours or put it in the fridge overnight
- Cut some fruits if you want or have. I used some fresh figs.

Hope you find this recipe useful for you and for your family. It's also a good breakfast for the kids. And you can have this for dessert too. A healthy one!
Be safe,
