Now try that in a crepe. Plus, they’re organic, gluten-free, sugar-free and dairy-free.
The filling
I’ve filled these crepes with my chocolate avocado pudding which I shared with you a little while back, and organic strawberry chia jam (see recipe below). The great thing about these fillings is you’re now loading the recipe with healthy superfoods, like avocado, chia seeds, and collagen.

In case you guys haven’t noticed, hahaha. And making these crepes for my friends and family is the perfect way to do that. Because they’re so damn good! It’s very convincing. I mean who says healthy food can’t be yummy too?
So if you’re looking for the perfect brunch recipe to enjoy with family and friends, or just need ideas to mix things up for breakfast, this recipe is great to have on hand.
Very easy recipe
Plus, these crepes alone only take about 20 minutes to make, with ingredients that you probably already have in your kitchen. And I’d just recommend prepping your fillings beforehand, if you’re serving guests, as those add a bit of time to the equation.
What's inside
Most of my ingredients listed below are organic and free-range, which is what I’ve used to make the recipe and encourage you to use also. But for convenience sake, if you don’t have all the below organic ingredients, feel free to substitute with regular eggs, for example, based on what you have to hand.
Here’s how I did it

Crepes
1 banana
2 tbsp organic peanut butter (or any other kind of nut butter, such as almond butter, cashew butter, etc.)
1 cup gluten-free oats, ground (you can also use regular oat flour if you don’t want it to be gluten-free)(measure before grinding)
2 free-range eggs
1 cup organic milk (use almond milk, coconut milk or other dairy-free milk for dairy-free crepes)
1 tbsp organic maple syrup
Pinch of sea salt
Organic cooking spray (walnut oil or coconut oil)
Strawberry Chia Jam
4 tbsp organic strawberry jam
2 tsp white chia seeds
Chocolate Avocado Pudding
Toppings
Organic maple syrup
Organic blueberries
Organic strawberries
Organic blackberries
Directions
First prep your strawberry chia jam by combining your strawberry jam and chia seeds, and mixing until well combined. (You can also opt to use homemade jam here.) Then prepare your chocolate avocado pudding.
Next you’re going to mash up your banana in a mixing bowl. Then add your nut butter, ground oats, eggs, milk, maple syrup and sea salt and whisk together until well combined.
Then spray a 9-inch non-stick frying pan with cooking spray and warm up your pan at medium heat. Next pour in a 1/4 cup of the batter and swirl around to spread out the batter. Cook for 1 - 2 minutes, until edges start to curl up and lightly brown. Then flip and cook for approximately 1 minute on the other side.
Continue to do this until you’ve used all your batter. Then add your chocolate avocado pudding, strawberry chia jam and banana slices to fill the crepes. And top with maple syrup, strawberries, blackberries and blueberries, or any toppings of your choice. And you’re all done!
