Steemit Iron Chef 2018 Act 02 #07 : Carrot-Cashew Ice-Cream Cake with Papaya-Ginger Sauce (Raw+Vegan)

Grounded, humble and a total classic - the carrot was the first thing that came to mind when I started to create my dessert recipe for this week’s Steemit Iron Chef competition. I like the idea of using something old-fashioned for a modern approach, that might be the reason why I liked to transform old items into innovative furniture some years ago, like a used skateboard into a modern cupboard. 

This time I transformed the well-known carrot into something special, without loosing its heart-warming charm.  

And since I am totally into healthy eating, my dessert recipe shows that gourmet dishes don't have to be a guilty pleasure. Without any animal products, gluten, refined sugar or oil, my ice cream cake still gives you the sweetness and excitement that we all love in fine desserts.  


Cake base:  

  • 1/2 cup walnuts 
  • 1/2 cup raisins 
  • 1 tsp cinnamon 
  • 1/2 tsp nutmeg 
  • 1/2 finely grated carrot 

Cashew cream:  

  • 1/2 cup cashew nuts (soaked in water over night) 
  • 2 tbsp raisins 
  • 1/3 cup water from soaked dates 

Topping Sauce:  

  • 1/2 cup papaya 
  • 1/2 thumb ginger 
  • 2 tbsp water from soaked dates


  1. Prepare the base, cream and sauce with the help of a blender. Add the carrots separately to the base mixture. 
  2. Spread the first layer of base and then the cream into a small cake tin or similar item. 
  3. Put it into your freezer and repeat the process twice after about 1-2 hours of freezing each time. 
  4. Free the cake of its shell and spread the sauce onto it. 
  5. Serve the cake with leftover walnuts, carrots, bliss balls made from the base mixture and cinnamon as topping. 


You will love the result - the cinnamon and nutmeg in the base give the cake a feeling of those comfortable rainy Sundays at home. The cream then provides you with a rich and nutty ice cream pleasure, until the exciting flavor of the fruity and spicy papaya-ginger sauce surprises you with its finesse.  

Ice-cream, cake and a healthy nugget on top - I hope my recipe will show you that a fancy dessert can be guilt-free and fairly simple, without missing out on an amazing taste experience!
