This is a classic Chinese meal - Egg Foo Young. This is a vegetable egg foo young recipe but you can add any cooked meat that you like. You can make shrimp egg foo young, chicken egg foo young or even tofu egg foo young. I love the texture and flavor of all the veggies. The egg foo young sauce/gravy brings it together.. Easy & Healthy Chinese Egg Foo Young Recipe ~ Chinese Cooking
INGREDIENTS:
6 eggs
1 tbsp light soy sauce
1/4 tsp. white pepper
1/2 to 3/4 cup diced mushrooms
1 cup bean sprouts
1/2 to 3/4 cup frozen peas
1/4 cup diced red bell pepper
4 garden onions - whites and greens
1 tbsp. chives
1 minced clove garlic - optional
SAUCE:
1 cup chicken broth
1 tbsp. light soy sauce
1 tbsp. oyster sauce
dash white pepper - optional
slurry - 1 1/2 tbsp starch and equal cold water
*In a pan mix chicken broth, soy sauce, oyster sauce
and white pepper. Stir and bring up to a boil.
Add slurry, stir and cook until thickened.
In a bowl mix the eggs, soy sauce, white pepper and vegetables. Stir gently until mixed.
In a non stick skillet on medium heat add a little oil and pour in about 1/2 cup of mixture. Level out.
Cook on one side for 2-3 minutes, flip and cook for another minute or two.
Pour Egg Foo Young sauce on top of cakes.
Enjoy.
