Blueberry & Black Pepper Bread Rounds - Easy Homemade Healthy Snack (Original Recipe)


As you know I like to mix it up with the sweet and savoury, so this time it's blueberries and black pepper combo, which is amazing!  Sounds a bit odd, but trust me, these are YUM!  I love the tang of the berries and the kick of the pepper, and a little bit of my 'secret' ingredient which gives the flavour extra depth - rosemary (well, it's not so secret now!)


My little boy is growing, growing, growing, and likes regular snacks rather than big meals.  But it's hard to find healthy options in stores, and the organic varieties are ever so expensive for all that you get.  So I so a spot of home-baking every few days to keep him supplied with tasty snacks that do him good, and this way can avoid all those nasty additives found in most snack-type 'foods'.  I vary the flavours and textures to keep things interesting too.  These went down a treat with Sky, and even my husband had one bite then gobbled down 5 more, so looks like I'll have to return to the kitchen to bake some more!  


Ingredients (organic recommended):


300g wholewheat flour

50g butter

1 tsp baking soda

1 sachet dried yeast

100g dried blueberries

2 tsp black pepper

2 tsp dried rosemary

175ml warm water


Directions:


Cut the butter into small piece and rub into the flour using your fingertips.



Add the baking soda, yeast, blueberries, black pepper and rosemary.



Add the water and mix together using your hand to form a firm dough.



Knead for a few minutes on a lightly floured surface until the dough is smooth.



Roll the dough out to about 0.5cm thickness, and cut out rounds using a pastry cutter.



Place onto a lightly floured baking tray, and pop in a preheated oven at 220 degrees Celsius for about 12 minutes until golden-looking.



Deeeeeelicious hot or cold!
