Kalasan roasted chicken has long been a favorite food of culinary hunters.

At first he was popular in Yogyakarta, then spread to other cities, including Jakarta and Bogor. As the name suggested, it seemed that this food was indeed from Kalasan, an area north of Yogyakarta. In Kota Gudeg, it was very easy to find stalls selling Kalasan roasted chicken or fried chicken. Yes, there was also Kalasan fried chicken. This was an option for consumers who were not fond of chickens being burned.

According to Sejarae.com, Kalasan roasted chicken pioneered by Mbok Berek. He opened a small food stall in Martani Village, Kalasan, Sleman, Yogyakarta. It was said that in the 1950s, President Sukarno once stopped by this shop so that his stall became crowded and growing.1

I'm a connoisseur of food, not a cook. But, if you want to know how to make Kalasan roasted chicken, this is the recipe:2

Materials
domestic chicken, garlic, salt, coconut water, bay leaf, galangal, brown sugar, tamarind water, and sambal plow to complement

How to Make

  1. Boil garlic, salt, coconut water, bay leaves, baking soda, galangal, brown sugar, and sour water until boiling.
  2. Enter the chicken. Cook over low heat until cooked and soaked. Lift. Chill.
  3. Freeze inside freezer. When presenting, leave room temperature.
  4. Burn the chicken until browned. Serve chicken with chili sauce.

Ayam Bakar Kalasan

Ayam bakar Kalasan sudah lama jadi makanan favorit para pemburu kuliner. Pada mulanya dia populer di Yogyakarta, lalu berkembang hingga ke Jakarta.

Seperti namanya, tampaknya makanan ini memang berasal dari Kalasan, suatu daerah di utara Yogyakarta. Di Kota Gudeg ini, sangat mudah menemukan warung yang menjajakan ayam bakar atau ayam goreng Kalasan. Ya, kini ada pula yang namanya ayam goreng Kalasan. Ini jadi pilihan bagi konsumen yang tidak doyan ayam yang dibakar.

Menurut Sejarae.com, ayam bakar Kalasan dirintis oleh Mbok Berek. Dia membuka sebuah warung makan kecil di Desa Martani, Kalasan, Sleman, Yogyakarta. Konon, pada tahun 1950-an, Presiden Sukarno pernah mampir ke warung ini sehingga warungnya menjadi ramai dan bertambah besar.1

Saya penikmat makanan, bukan tukang masak. Tapi, kalau kau ingin tahu cara membuat ayam bakar kalasan, ini resepnya:2

Bahan: ayam negeri, bawang putih, garam, air kelapa, daun salam, lengkuas, gula merah, air asam jawa, dan sambal bajak untuk pelengkap

Cara Membuat:

  1. Rebus bawang putih, garam, air kelapa, daun salam, soda kue, lengkuas, gula merah, dan air asam hingga mendidih.
  2. Masukkan ayam. Masak di atas api kecil hingga matang dan meresap. Angkat. Dinginkan.
  3. Bekukan di dalam freezer. Saat menyajikan, biarkan suhu ruang.
  4. Bakar ayam hingga kecokelatan. Sajikan ayam bersama sambal.
