FruitsAndVeggiesMonday | Sweet Patato Beetroot Salad

I'm back with another post sharing some of the Plant-Based food I'm eating during my 100 Day Challenge. This week it's a VSweet Patato Beetroot Salad that takes very little time to premare. This is my entry for the #fruitsandveggiesmonday competition which is hosted by @lenasveganliving and sponsored by @progressivechef & @englishtchrivy.


Sweet Patato Beetroot Salad

Main Ingredients: Sweet Potato | Beetroot | Salad | Radish Sprouts | Spring Onion


The sweet potato was put in the oven first for more than an hour, the same can be done with a fresh beetroot which they did not have in the store which made me take the pre-cooked version.


First Peel and cut the soft sweet potato (can also be made with normal patatoes)


Put some salad and beetroot that's cut into pieces on top.


More Salad and radish sprouts


Top with some Spring Onions.


Finish with some walnuts, spices and nutritional yeast. (some olive oil is optional but not needed as the sweet patatovalready helps no to make it dry)


This recepe is again very cheap, easy and quick to make and anything can be added, removed or changed based on personal preference
