FruitsAndVeggiesMonday | Vegan Minestrone Soup

I'm doing a 100 day challenge eating a whole food plant-based diet and enjoyed sharing my 100% Plant Based Chilli Con Carne last week joining the #fruitsandveggiesmonday competition from @lenasveganliving . Today I made a one of my favorite soups packed with a lot of fresh vegetables.

RecipePut a Cooking pot on a soft fire, add a tiny bit of olive oil and add the ingredients one bu one after cutting them up...
Onions
Garlic
Leek
Cabbage
Add Herbs
-(Smoked Paprika Powder - Salt - Vegetable stock powder - Marjolin - Basil - Oregano - Cloves Powder - Mint - Tomato Concentrate)
Carrots
Celery
Butter Turn
Parship
Broccoli
Parato
Legumes
-White Beans - Kidney Beans - Peas
Tomatoes
->Add some water but not too much.
->Let it softly boil for 1 hour+

This recipe is a combination between soup and just vegetables to eat. It can be made in any combination and every vegetable you want can be added or removed from the ingredients. This is very cheap and easy to make in big amounts for the entire week or to put in the freezer for later times.
