Maize or corn is a staple food in many countries of the world.
I don't know about you but I love sweet corn. I could eat it all day long. Usually I have it cooked with salt or as a polenta, but also love it on my vegetarian pizza.
Some say an ear of corn has about the same number of calories as an apple and less than one-fourth the sugar. The antioxidant activity, which helps protect the body from cancer and heart disease, is increased when the corn is cooked. Sweet corn is loaded with lutein and zeaxanthin, these two phytochemicals promote healthy vision, which is extremely important.
According to the Institute of Medicine, women need 25 grams of fiber per day, and men need 38 grams per day. A midsize ear of corn offers a 3-gram dose of dietary fiber.
Cooked sweet corn, my favorite :) I can hardly wait to have it in the garden.
When you are at the market, avoid corn with dry, pale husks and silks that are desiccated where they enter the cob. If pricked, kernels should squirt whitish juice, so keep this in mind and try it before you buy corn. And don’t buy a cob that’s more than 24 hours out of the field. I know it's not always easy, but try to pick the fresh ones.
The calorific content of corn is 342 calories per 100 grams. This is among the highest for cereals.
