Looking through my cupboards led to the discovery of a can of clams in a dark, forgotten corner. Looks like I was making clam chowder for lunch!
Ingredients:
- 4 slices bacon, diced
- 1.5 cups chopped onion
- 1.5 cups water (or broth)
- 4 cups potatoes, peeled/diced
- 3 cups half-and-half
- 3 tbsp. butter
- 2 cans clams, minced
- salt/pepper to taste
Instructions:
- Cook diced bacon until crispy. Add onion and cook additional 5 minutes, or until softened.
- Stir in water (broth) and potatoes. Season with salt/pepper and bring to boil. Cook uncovered for 15 minutes or until potatoes are tender.
- Pour in half-and-half and add butter.
- Add clams and 1/2 of reserved clam liquid. Cook until heated through (approx. 5 minutes).
I had to improvise a little since I did not have half-and-half so I added milk instead. I also cut the recipe down to make a little less and added frozen corn for a bit of color. Here are a few pictures of the process:
Voila! I can’t stage food to look appealing to save my life but trust me when I say it was tasty! I topped my bowl with some oyster crackers and quickly dug in!
