I am in love with the blissful combination of chocolate and peanut butter, and always seem to be craving something sweet and comforting. Right now I am not eating sugar in my diet, so I created magical sugar free peanut butter cups to satisfy my soul, feel free to sweeten them up if you wish. I ended up creating a very delicious, quick, and easy recipe that I am so excited to share with you all on Steemit! ❤

My recipe is full of pure ingredients. Feel good about what you are putting in your body, you deserve the best. It is also so very satisfying, and gives you those feel good feels to make your own food.

I recently went to the local co-op and got a sugar free peanut butter cup that was sweetened with stevia, which I am not a huge fan of in liquid form. So I thought, well I can make something delicious and peanut buttery without sugar and stevia if I put my mind and my heart to it. By adding lots of cinnamon, and some peanut butter to my melted chocolate, it still had a welcoming hint of sweetness. Feel free to add honey or maple to sweeten your chocolate! My tummy and my creativity have been very satisfied and feeling great eating these.
3 main ingredients:
Coconut oil (organic, unrefined), raw organic cacao, and organic peanut butter
So let us gather our ingredients,
A bowl and pot for a double boiler, a rubber spatula, a spoon,
And mini cup pans/silicone or full sized
Start with our double boiler, which is a pot with about an inch or two of water, and a metal bowl on top. This creates a gent heat to melt our coconut oil and cacao, which are quite sensitive, the lower temperature preserves their many nutrients. Turn the heat to medium-low. You do not really want the water boiling in rage, just a nice steemy simmer.
Then add your coconut oil- 8 oz. Organic, unrefined coconut oil. Coconut oil is an amazing super food, with numerous health benefits, it is a staple part of my diet. Check this out this article by the wellness mama for more info- https://wellnessmama.com/5734/coconut-oil
Stir, and melt slowly
Now for the sea salt, lets add this now so it can melt a bit. Pink Himalayan sea salt, and sea salt in general, has way more nutrients and health benefits than any table salt. Let that mix in and then go ahead and remove the bowl from the heat now that it has all melted.
Then add your Raw Organic Cacao. Raw cacao is an amazing super food with many antioxidants, phytochemicals, and other amazing nutrients known to increases your energy levels, fight cancer and surrender us chocolate lovers into pure bliss.

Then add your cinnamon. The cinnamon in here really pairs well with the chocolate, and brings a hint of sweet earthiness to these cups. Now is the time when you can add your sweeteners.
I added a big spoonful of organic peanut butter to keep is sugar free but with a little help.
Peanut butter is comforting in this combo but feel free to use any other nut butter.
All of these sweeteners are local and/or organic and in their whole form.
Honey and maple, when not over indulged, are a great source of a healthy sweetener alternative to sugar.
They are full of nutritional benefits as well, no need to feel guilty :)
Now mix that all up nicely, and send your chocolate magic your lovin'.
Begin pouring your bottom layer of chocolate into your molds/
Greased mini muffin or full sized pans.
You want this to be very thin, so pour very slow, stop just after covering the bottom.
You do not want this to be too thick, I did this my first time and the ratio was way off.
Also only pour about half of your chocolate for the bottom layer, reserving the rest for the top.
Then put these into the refrigerator until they set :)
Next spoon your peanut butter layer on.
Try to flatten this out best you can so the top chocolate layer covers nicely.
Then pour your chocolate layer over, go nice and slow.
Pour just until it covers the peanut butter.
Place these pack into the refrigerator to set.
Then we can pop them out!
And surrender to their delicious, chocolate peanut buttery goodness!
Note: these will melt if out in warm temperatures, so it is best to keep them refrigerated.
