“What’s for Lunch?” Healthy Recipe Series #11 - Spaghetti and Special Meatballs

The goal? To cook a relatively healthy dinner using only leftovers - mainly the lean ground turkey burger. The answer? Spaghetti and special meatballs using a secret ingredient!

Ingredients (meatballs):

  • Lean ground turkey burger
  • One (1) farm fresh egg
  • Whole ground flaxseed meal
  • Garlic, minced
  • Horseradish
  • Mozarella cheese

Instructions:

  1. Mix ground turkey burger, egg, flaxseed meal, garlic, horseradish and shredded cheese together in a large bowl.
  2. Roll into golf ball size meatballs and place in a glass baking dish.
  3. Bake at 350 degrees for 15 minutes, flip to other side, and continue baking for 5 minutes.
  4. Serve with noodles and your favorite pasta sauce.

First, the secret ingredient is indeed whole ground flaxseed meal! Normally, a meatball recipe will call for breadcrumbs and egg but since I couldn’t find our stash of crumbs, I replaced it with a high fiber alternative!

Next, you may be wondering how much of each ingredient I used… well, I have no clue. I can be a very free-spirited cook that makes up a recipe as a go. So just base the amount off of personal preference. If I had to make approximations, I would say 1/4 cup whole ground flaxseed meal, 1 tsp minced garlic, 1-2 tsp of horseradish, and 1/3-1/2 cup of mozzarella cheese!

I thought it tasted pretty good considering I whipped it up without a second thought!
