As long as snow doesn't blanket the ground, I'll find some weeds to put on my sandwich! Here's a vegan sandwich with 3 winter weeds of Oregon's Willamette Valley!
Getting My Sandwich Together
First I went for a walk in my yard, to see what tasty weeds I could find. It's amazing to me how some weeds do better in the winter than in the summer. That's the case for all the weeds in my sandwich. When it gets cold - we can get below 0 F here - they take a beating, but they spring back quickly. It's only gotten down to 19 degrees F so far this winter, so they are looking good.
To make my sandwich, I finely chopped all my greens and the pickles. Then I stirred in about half that block of tofu. I added some Dijon mustard and the filling was done.
I like an open-faced sandwich with a soft filling, like this -- otherwise, it all seems to squish out! And that's not a fun way to eat a sandwich!
Eating My Winter Weed Vegan Sandwich - So Good!
I hope you get to enjoy fresh greens of some sort during the winter or in early spring! Spring is coming and there will be so many great greens to eat! :D
