Though peaches are rare in Cambodia, my friends know how to surprise me. When they went to the capital earlier this week they brought back some peaches and other yummy goodies for me. Though I ate most of the peaches straight away, I had some left this morning to make a yummy, creamy green drink.
Combined with some of the last mangoes we had left in the freezer from our garden, this was another perfect start of the day... and even better... It's weekend. Wednesday and Thursday are our closing days, so we invited our friends over for a cookout. Looking forward to some time to unwind and relax. Just what we need after a hard week's work in the bakery.

CREAMY PEACHY CASHEW MORNING BLISS 🍑🌱🌻
INGREDIENTS (serves 2 for breakfast)
2 cups spinach
1.5 cups water
0.5 cup cultured coconut yogurt
2 tbsp raw cashews soaked overnight and drained
2 tbsp coconut oil
2 cups peaches
1 cup mango
2 passion fruit
1/2 tsp vanilla extract
Goji berries (optional topping)
DIRECTIONS
- Soak cashew nuts overnight.
- Blend spinach and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick, add more liquid base. If you have a high-speed blender, throw everything in at once.
- Optional: top with toppings/superfoods of your choice. I used goji berries this time.
