Avocado Bacon Zoodles
Prep time: 10 mins | Cook time: 5 mins | Serves: 2
Ingredients:
- 1 ripe avocado
- 1 clove of garlic
- ½ lemon's juice
- 4-5 fresh basil leaves
- black pepper
- sea salt
- 3-4 bacon slices
- 2 medium zucchini
- 1 teaspoon coconut oil | olive oil
Let's make this!
- Put the avocado, garlic and basil leaves into a food processor. Process until well combined and creamy, then add the lemon juice, salt and pepper to taste.
- Cut the bacon into small pieces and fry them as you like.
- Using a spiralizer or vegetable peeler prepare the zucchini noodles. Sauté them for 2-3 minutes, until the zucchini is not raw, but not soggy yet.
- Mix the zoodles with the avocado sauce then top with bacon.
