A simple LEMON CAKE RECIPE to start the week with

Lemon Cake

Start the week by spoiling yourself with a delicious zesty Lemon Cake!

The weekend went by sooo fast! I hope you had a great one :)

We had a few friends come over and the weather was amazing so I felt like making a simple sweet treat with a zesty citrus flavored twist, so I made this lemon cake which turned out a hit!

I usually don’t like lemony desserts so it was a long shot BUT the flavors blended in so nicely and gave the cake a delicate citrusy twist. So you don’t have to be a lemon fan to love it.
It’s a simple recipe, I hope you love it!


Lemon Cake Recipe

Ingredients:
2½ cups flour
2½ teaspoons baking powder
½ teaspoon salt
4 teaspoons corn flour
Zest of 2 lemons
1¼ cups milk
2 tablespoons canola oil
2 teaspoons lemon juice
150 grams butter, room temp.
1¼ cups sugar
4 eggs, room temp.


Method:

  • Preheat oven to 180 degrees.
  • Grease and flour a round 10 inch spring form cake pan.
  • In a medium sized bowl combine: flour, corn flour, baking powder, salt and lemon zest. In a small, separate bowl mix together: milk, oil and lemon juice.
    -Beat the butter until smooth and light. Gradually add sugar and mix for 4-5 minutes until combined and fluffy.
  • Continue mixing on medium speed and gradually add the eggs one at a time, and the flour and milk mixture alternately until combined.
  • Pour the batter into the prepared pan and bake at 175 degrees Celsius for 40 minutes or until a toothpick inserted comes out clean.
  • Remove from oven and cool in pan for 10 minutes before removing from tin.
  • Serve and enjoy with a nice cup of tea on the side.
