Mouthgasmic Food Formulas: GLUTEN FREE BANANA PANCAKES


We are grateful for the opportunity to share food here in the Garden of Eden!


One way we do that is by giving away free food every single day, and we extend the offer to you too because we are here to help one and all: if you or anyone you know wants or needs food, contact us - we will give you free food, no questions asked. 

Another way we do that is by preparing daily feasts for our full time volunteers and having communal meals together, which we share here on the blockchain every day!

Today, we want to share an excellent food formula for GLUTEN FREE BANANA PANCAKES! 



The inhabitants of our ecovillage have a variety of dietary preferences; we have vegans, vegetarians, omnivores, and people who prefer a paleo-ish diet that avoids grains and processed foods. Most people are pretty flexible and do not label themselves this or that, but rather choose to eat whatever feels good for their body on a given day.

After following an anti candida cleanse for over a month, most of us find that we feel better when our diets are based on fruits and veggies rather than wheat, meat, sugar, and dairy, so we adjusted some of our favorite traditional recipes to reflect our preferences for feeling great! 

These gluten free banana pancakes are one of our mouthgasmic upgrades. Please enjoy!



These are also excellent served with uncured hot ham and over easy fried eggs for our meat eating friends! 


Prep time: 5 minutes
Makes: about a dozen 4 inch pancakes
Cook time: ~ 15 minutes per pan (x2)  


Ingredients:
1 1/2 cup Gluten free flour
2 cups Coconut milk  
1 egg
1 banana, mashed
Dash of vanilla
Squirt of agave nectar
Pinch of salt  


Method:

 Mix wet and dry ingredients separately, then combine and stir with a fork. Don't over mix!

Add a little flour or milk if it is too runny or thick, respectively.  


Cook  over medium low heat. Once there are bubbles throughout it is time to  flip. 



These gluten free pancakes are great well browned and a little  crispy. 




Served here with butter (melted), whipped cream, pure maple syrup and a sliced strawberry.
