Many people like to eat noodles, my family also likes. But we don't eat it every day. I have a friend, who comes from Xi'an, eating noodles everyday. So it's really easy to make it for those people who often eat it.
But I don't do it regularly, most of noodles were done by machine. And one thing is that the noodles made by machine are identical, however, hand-made noodles are different, they can be cut respectively according to your favorite.
I like wide, my son likes thin noodels, so I can do two kinds of noodles at the same time by hand. Furthermore, there is a kind of family's flavor in the hand-made noodles .
When I was a child, I ate the noodles made by my mother, I like the taste of my mother's cooking because it tastes like home. Even though there wasn't special ingredients which was added in the noodles, I still thought it was delicious! Now I made noodles and my son played around me, I hope he also has the good feeling when he grows up.
Delicious noodles still need to have delicious soup except the texture of it.
And broth can be made from a wide range of ingredients.Such pork and chicken bones fresh dried and processed sea food and more. Today I used the chicken bones, tastes very good! I cooked it for at least two hours. Eating such a bowl of noodles in cold winter, you will forget cold and feel warm.
很多人都喜欢吃面,我家也是。但不是天天吃哦。我有个朋友,老家西安的,几乎天天吃面。所以手擀面对于常吃面的人来说真的很简单。
但我其实并不是总做手擀面,家里有自动面条机,每次大部分都是机器制作。但是机器有一点不好就是面条出来的都是一样宽的,虽然模具有很多种,宽的,细的,但是每次只能出一样。手擀面就不同了,可以分开切面,我喜欢宽的,孩子喜欢细面,那么就可以同时做出来两种。而且手擀面总有一种家的味道。
小时候吃的面条都是爸爸妈妈亲手做出来的,即使没有什么特殊的配料,简简单单的就已经非常好吃了。现在每次一吃起手擀面就会想起家的感觉。那时候妈妈在一个大圆桌子上,拿着一根长的擀面杖,三下两下,就杆好了一张大大的薄片。然后撒上薄面粉,再折叠起来,切成粗细均匀的面条就可以煮吃了。而今天我做着妈妈当年同样的活,桌子旁边就是我的孩子(他非常喜欢在我做面食得时候帮我忙),希望他将来长大的时候,回忆起这段往事,也能拥有这份美好的感觉。
面条除了面的口感之外,还有配料及汤底的选择也很重要。像日本的拉面好吃,汤底尤为重要。有很多种,比如大骨头汤,海鲜汤,牛肉汤,鸡汤等等。今天的汤底我用的是鸡汤,这是用半只笨鸡炖了足足2个小时。大冷的冬天来一碗暖暖的鸡汤面,非常美味哦!
过程:
1、其实和面真没有具体的数量和水,我每次都是看情况来添加。但是一定要放一点盐,这样面条会更有筋道。稍微硬一点没有关系,醒20分钟之后,面团就会柔软很多了,再次揉光滑,然后再醒15分钟。
2、杆面的时候尽量杆成长方形,这样切的时候面条长度就一样了。切的时候按自己喜欢宽度来切就好了,这次我切了宽、细两种不同的面。
鸡汤的做法:半只鸡切开放入锅中,放三四片姜,葱段,八角,胡椒 ,料酒,生抽,加足冷水,小火炖1-2小时。最后加盐调味。然后放一点青菜煮就可以了。配菜自己随意啦。
然后把煮好的菜和鸡汤一起倒进面条碗中。
超美味爽滑的鸡汤面就完成了。
