Yesterday, I shook things up a little for lunch and came out with these: turkey spinach bacon tortilla wraps with goat cheese core. I'm still stuck on that goat cheese so I've been finding more uses for it other than crumbling it on pizza, which is amazing.
What you need, for 4 smaller sized rolls:
4 tortillas
Mayo
Mustard
Goat Cheese
Spinach
Cherry Tomatoes
100g bacon
Parmesean cheese
Sliced Turkey Breast Lunch Meat
Start by frying the bacon, I used bits and pieces for this although strips might work better.
So begins the layering process.
Thin layer of mayo.
Layer of raw spinach leafs.
2 pieces each of the turkey.
Then Parmesan cheese, more spinach, bacon, cherry tomatoes quartered.
And that goat cheese center.
Roll it up tight, hold together with two toothpicks and slice down the middle.
