FOOD DIARIES Act 3 - GAZELLE HORNS

Hello all foodies out there!

Welcome back to FOOD DIARIES Act 3 where we will discover something sweet this time!

Yes today i'm gonna show you how to make this famous Moroccan sweet which has a crescent shape and very famous in the Arabic Cuisines!

The name given to this cake is GAZELLE HORNS or CORNE DE GAZELLE in French and KAAB EL GHAZAL in Arabic!

So here we go Steemians

For the dough

• Flour 500gms
• Icing Sugar 2tsp
• Unsalted butter 125gms
• Half glass of water + 1 drop of Orange blossom
• 1 pinch of salt
• 1 pinch of Arabic gum crushed into powder

In a mixing bowl, put all the dry ingredients and mix well.
Add the butter and proceed same like a sablé.
Next add the orange blossom water till you get a dough same as the picture below.
The dough must be hard in consistancy. Let is rest for minimum 8 hrs in the fridge.

For the Almond Filling

• Homemade almond powder 500gms
• Icing sugar 250gms
• Unsalted butter 50gms
• Apricot or peach jam 1tsp
• 1 pinch of Arabic gum crushed into powder
• 1 drop of Orange blossom

Mix all the ingredients mentioned and you will get the below result, a slightly sticky rough almond paste.

HOW TO PROCEED

Make oblong shaped small balls with the almond paste like that!!! The weight depends on how big you want the horns to be.

After the 8 hours rest, roll the dough the more thinly you can…

Put 1 small almond ball on the thin dough…

Cover the almond ball with the dough as shown here ...

Give the shape of a Crescent moon with your thump and index finger. Take out all air pockets, press well.

After having given the form, cut it with a roller dough cuter again in the Crescent moon form..

That's how it should look like after cutting.

Put directly on a baking tray as now it needs at least minimum 8 hours of rest again in ambient temperature!!!

After 8 hours they should be looking like this!!!

Take each cake and put small holes with a pin for it not to develop and burst during cooking and also take out any air that has been left. Then start the cooking by putting it in the oven heated at 110 degrees for 20 minutes

In the meantime, prepare an egg white glaze by whisking 1 egg white with 1 tsp icing sugar and 1 drop of Orange blossom.

After 20 minutes, take out the cake from oven and brush with the egg white glaze, this will make the Gazelle Horns to have a shiny look and also a very amazing crisp.

Put back in the oven for a further 20 minutes.

Here is the final results after the cooking. You can eat once it is at room temperature and stock them in air tight container for several days.
