Perfect Vegan Dinner: Grilled Squash and Mushrooms with Balsamic

Are you a vegan? Or just already had enough meat this holiday season? The following recipe is definitely for you.

No need to go out to make a great grilled dinner. With a grill pan this dish will be easy, really fast to prepare and incredibly tasty. Definitely, if you don’t have a grill pan you might try to cook it using ordinary pan, but I really urge you to make yourself a present and buy a grill pan. There is nothing like a smell of grilled vegetables, believe me.

What you will need

  • grill pan;
  • squash or aubergines (or both with onions);
  • mushrooms;
  • dried oregano/basil/parsley;
  • ½ cup olive oil;
  • salt;
  • balsamic.

How to cook

Cut squash (aubergines) into any forms you like. You might do something really fancy, or just leave this to kids (use safe knives). Cut mushrooms into halves.

Put all into a deep bowl. Add oil, herbs and salt to taste. Mix it all together and let it stay there for up to half an hour.

Preheat a grill pan to medium-high level. No need to add oil since we added enough to vegetables already. Put your squash/aubergines/mushrooms into a preheated grill pan.

Carefully turn them over in some five minutes with a wooden spatula.

Serve while hot with your favorite kind of balsamic and you won’t regret!
