Yes, soup again! This beef vegetable farfalle pasta soup recipe is easy, delicious and warming. Using ground beef and lots of vegetables in a rich beef tomato broth.
We had the cold blast here in the Northeast last week. Yesterday was like a heat wave for us..was in the 40's. This morning we woke up to snow. When will this weather make up its mind?!!!
Anyways, soup is the answer. It always warms my toes and hits the spot. Enjoy and keep warm. :)
Beef Farfalle (Bowtie) Vegetable Winter Soup
INGREDIENTS:
1 pound cooked farfalle pasta
1 pound ground beef
8 cups beef broth - can use vegetable or chicken
1 cup diced onions
1 cup diced celery
1 cup diced red bell pepper
1 cup sliced carrots
1 - 28 oz can whole tomatoes
4 cups fresh baby spinach
salt and pepper
1 tsp minced garlic
1 tsp thyme
1 tsp marjoram
In a soup pot on med high add a couple tbsp olive oil.
Add onions, celery, red bell pepper, salt and pepper.
Stir and cook for 2-3 minutes.
Add carrots and cook for 2-3 more minutes.
Add minced garlic, thyme and marjoram. Stir and cook for 1 minute.
Add ground beef, chop and cook for 5 -7 minutes until browned.
Add can of tomatoes and chop up tomatoes with your spoon as you stir. Cook for 2-3 minutes.
Slowly add in beef broth and bring up to a simmer.
Cook for 20-30 minutes.
Add spinach in slowly and in batches. It will wilt quickly.
Stir and cook for 10-15 more minutes.
Serve over farfalle pasta.
Serving tonite with pumpernickel bread.
