Homemade Cream of Mushroom Soup Recipe ~ FOOD PHOTOS

Last night I made some homemade cream of mushroom soup. It really hit the spot. Lots of mushroom flavor, rich and creamy. Video recipe coming soon! Much Love, Tess

Homemade Cream of Mushroom Soup

INGREDIENTS:
4 cups sliced mushrooms - Cremini or Button
1 medium diced onion
2 stalks diced celery
6 cups vegetable or chicken broth
1 cup heavy cream
2-3 cloves minced garlic
sprigs of thyme or 1/4 tsp dried thyme
salt and black pepper to taste
2 tbsp. flour
1 tbsp. butter
1 tbsp. olive oil

In a large pan on medium heat add butter and olive oil. Let butter melt.
Add onions and celery. Cook and stir for 3-4 minutes.
Add mushrooms and garlic. Cook and stir for 10-15 minutes. Let a little liquid on the bottom.
Add flour, cook and stir for 1 minute.
Add broth a little at a time. Turn heat up to medium high and bring soup up to a simmer. Add thyme, salt and black pepper to taste. Simmer for 15-20 minutes.
Take out half or 3/4 of soup and blend until smooth. Add back into pan.
Add cream and cook for 3-5 more minutes.
Enjoy.
