I love fresh asparagus. This is fresh asparagus with garlic, dill and key lime! Served with poached egg on top for breakfast. So light and refreshing. A great way to start the day...or eat anytime!. Enjoy.
Awesome Key Lime & Dill Asparagus
INGREDIENTS:
1 bundle fresh asparagus
3 large cloves of garlic - sliced
1 tbsp chopped fresh dill
3 small key limes - zest and juice
1 tbsp butter
salt and pepper to taste
Clean asparagus well under cold water and cut off tough ends.
In medium skillet place 1 tbsp butter and sliced garlic. Saute for 1 minute stirring constantly.
Add asparagus and toss in garlic butter. Cook for 3 minutes. Add salt and pepper to taste, dill, key lime zest and juice.
Cook for an additional 2-3 minutes until asparagus is tender. Do not over cook.
Serving as breakfast today with poached eggs on top.
Can be served as breakfast, brunch or a side dish.
