Today i'm going to tell you a little secret... I used to hate cooking 😂 It was really just one of those this I had to do since we have to eat. So many times I had no idea what to make and it often ended up in a hangry argument about what to eat and then something really fast to make and not so healthy. Today is a totally different story, I love to try new flavours and textures. And discovering new vegan restaurants is one of the most exciting things I know. So today I'm going to share one of my favourite recipes with you.

Asian rice noodle salad
I can't remember who found this recipe. If it was me or my hubby but it has been a favorite of mine for a long time. It's taken from a Swedish webpage www.undertian.com it's a website that makes cheap meals under 1 euro per portion.
This is my go-to meal when I want something quick nourishing and yummy. I usually eat a lot of food, and I love to feel full. The worst feeling I know is to be hungry. And this meal really ticks all the boxes.
A few ingredients can really make a delicious meal
Recipe
Servings: 2
Ingredients:
Salad
- Tomato
- Cucumber
- 180 grams of rice noodles
- Salad
- 2 spring onion
Sauce
- 2 tbsp water
- 2 tbsp vegeteble oil
- 2 tbsp sesame oil
- 2 tbsp of white wine vinager
- 2 tbsp of soy
- 2 tbsp grated ginger
- 2 red chilies or 2 spice measurements of sambal oelek
- 2 garlic cloves
- 2 tsp of agave syrup
Method
Mix all the ingredients for the dressing in a high-speed blender so it's just blended.
Boil the rice noodles.
Chop up your veggies and put in a bowl with the rice noodles and pour on the sauce.
Mix together and enjoy
I hope you enjoyed this recipe as much as I do. It litterally takes about 10 minutes to make 😊
