Good morning steemit. I hope you all had a great weekend. Mine has just started. Woot woot. Though I will have to work on my online business today and do some household chores, it's lovely to be at home and have nothing planned. If it doesn't start raining I am definitely going to the beach.

Don't get me wrong, I still love our bakery project but after working from home for the past 6 years, it feels so good to be at home again for 2 days.

And what a better way then a smoothie bowl to start the weekend (or new week)?

Though my hubby isn't a fan - he calls it baby food - I just love them. What about you are you a smoothie bowl lover?

PINEAPPLE BANANA SMOOTHIE BOWL 🍍🌱🍌

INGREDIENTS (serves 2)


For the smoothie base


1.5 cups pineapple chunks
1.5 big banana, peeled and frozen
1 cup fresh spinach, packed
1/2 cup almond milk (or any other dairy-free milk you like)

For the toppings


0.5 cup pineapple chunks
0.5 banana, sliced
2 tbsp dried goji berries
2 tsp chia seeds

DIRECTIONS


  1. Place all smoothie base ingredients in a high-speed blender. Secure the lid and blend starting on low and work up to high speed. Blend until completely smooth. Add more almond milk or water if needed.
  2. Pour the smoothie base into bowls and top with sliced banana, pineapple chunks, goji berries, and chia seeds.

FUI: For a soft serve ice cream consistency, freeze all smoothie base ingredients, except for the almond milk or water and blend while still frozen.
