Slow Cooker Beef Stew Recipe {Low Carb, Paleo}

Hey guys, how are you doing?
Apparently, spring doesn't want to come here. It's still cold, rainy and gray in here. :( On these cold days we like to eat hot soups and stews. Last week this was no different: we were craving for a large bowl of hearty stew, when I made this delicious beef stew with a lot of root vegetables.

This filling, nutritious low carb comfort food is the best beef stew made in a slow cooker. After just 30 minutes of preparation and making the stew-base, let your slow cooker to do the rest to get this rich and flavorful meal. The beef chunks and vegetables will simmer into a delicious thick stew, that doesn't need to be thickened with flour. This simple comfort food is healthy as well: the stew is all made from fresh healthy vegetables, herbs and beef, nothing artificial, preservatives, flour, sugar, just clean natural ingredients.

Slow Cooker Beef Stew

Prep time: 30 mins | Cooking time: 4 hours | Serves: 4

Ingredients:

  • 500 g | 1.1 lbs beef chunks
  • 1 large onion
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 3 medium carrots
  • 2 parsnips
  • 3-4 celery sticks
  • 1/2 turnip
  • 1 tbsp smocked Hungarian paprika
  • 1 tsp paprika cream
  • 1/2 cup tomato paste
  • 1 bay leaf
  • 1 tsp parsley
  • 1 tsp lovage
  • salt
  • pepper

    Let's make this stew!

  1. In a large pot heat the oil, add the chopped onions and sauté for 3-4 mins. Add the beef chunks and cook until they turn brown.
  2. Sprinkle the beef with paprika and immediately add 1 cup of water. Stir well, add the chopped garlic, season with salt and pepper to taste.
  3. Season the stew with the herbs, add the paprika cream and the tomato paste. Cover with a lid and simmer for 15 minutes on medium heat.
  4. While the stew is thickening chop the vegetables.
  5. Transfer the stew into a slow cooker, add the vegetables and more water if necessary.
  6. Give the stew a good stir. Cook for 4 hours on high or 6 hours on low.
  7. When the meat is tender, serve the stew with sour cream.
