How do you make your family eat their veggies?
This great soup recipe I received from my mother-in-law a couple of years ago when she saw I was having a bit of a challenge while trying to feed my kids their vegetables. It's been a hit ever since I first tried it. Since the soup is blended they do not see the actual veggies so they gladly eat it.
It contains all the nutritional vegetables and with a few spicy touch-ups it tastes delicious! It’s a boost of health in one bowl and the kids even ask for more!
Simply chop em up, spice it up, heat it up, and serve with their favorite croutons. Because let’s face it, the soup is just an excuse for them to eat the croutons :)
By the way, the root vegetables make it filling so you could either serve it as a starter or as a meal of itself.
So the secret recipe for a Tasty and Healthy Orange Soup is:
Ingredients:
1 sweet potato
2-3 carrots
1 zucchini
1 celery root (or parsley root)
¼ cup orange lentils, rinsed
1 bunch of fresh parsley
1 bunch of dill
1 tablespoon turmeric
½ tablespoon cumin
Salt and pepper to taste
To serve:
Your favorite croutons,(optional- a dollop of sour cream), and chopped chives for garnishMethod:
Heat the oil in a deep non-stick pan, add the chopped onion and sauté on a medium flame for 2-3 minutes, or until translucent:
Add the vegetables to the pan and cover with water. Add the lentils, the spices (feel free to spice it up to taste!) and place the fresh parsley and dill on top (they will be removed by the end of the cooking):
Reduce heat and simmer for about 30 minutes, or until the vegetables are tender. Remove the parsley and the dill:
Blend until smooth. (If you prefer a thinner soup, add an extra cup of water. If you prefer a thicker soup then drain some of the liquids before blending):
Serve with your favorite croutons, a dollop of sour cream and chopped chives for garnish and simply ENJOY!!
Orange Soup Recipe:
Ingredients:
1 large onion, chopped1 sweet potato
2-3 carrots
1 zucchini
1 celery root (or parsley root)
¼ cup orange lentils, rinsed
1 bunch of fresh parsley
1 bunch of dill
1 tablespoon turmeric
½ tablespoon cumin
Salt and pepper to taste
To serve:
Your favorite croutons, a dollop of sour cream and chopped chives for garnishMethod:

- Peel and slice all the vegetables and add to the pan.
- Add water until covers the vegetables, add the lentils, the spices (feel free to spice it up to taste) and place the fresh parsley and dill on top (they will be removed by the end of the cooking).
- Reduce heat and simmer for about 30 minutes, or until the vegetables are tender.
- Remove cover of pot and allow to cool for a few minutes. Remove the parsley and the dill.
- Blend until smooth. (If you prefer a thinner soup, add an extra cup of water. If you prefer a thicker soup then drain some of the liquids before blending).
- Serve with your favorite croutons, (optional- a dollop of sour cream) and chopped chives for garnish.
