This weekend I made these awesome fluffy dinner rolls that I’d love to share with you. This is one of my favorite recipes for homemade rolls.
The caramelized onions give it a twist of sweetness and once it gets out of the oven the smell is irresistible. With a bit of butter on top… perfection! It makes it becomes such a comforting treat.
I made them with caramelized onions on top but you can also knead the onions with the dough to blend the flavor throughout the bread .
These rolls will definitely disappear fast at the table, will compliment any main dish and sides you decide to serve.

Soft Caramelized Onion Rolls
For the dough:
3½-4 cups bakers’ flour
2 teaspoons salt
1 teaspoon sugar
2½ teaspoons active dry yeast
3 tablespoons oil
1 and 2/3 cups of lukewarm water
1 large onion, finely sliced
¼ cup olive oil
Poppy seeds (optional)
Coarse salt
Method:
For the onion mixture:
Preheat a medium sized pan with oil, over medium –low heat. Add sliced onions, and sprinkle with a bit of salt. Stir and sauté until they caramelize and become golden brown. Set aside.
For the dough:
- In a mixer, with a dough hook, add 3½ cups of flour, salt, sugar and yeast. Mix until combined. Make a well in the middle, pour in oil and water and knead on low-medium speed for 5-10 minutes until dough becomes smooth and elastic (if the dough is too wet, add the remaining ½ cup flour).
- Transfer to a lightly oiled bowl. Cover and set in a warm place until doubled in size (about 1-2 hours).
- Place the dough onto a floured surface and flatten with the palms of your hands. Divide into 10 even balls by pulling the dough from the outside of the ball and pushing into the center. Turn over with the ends underneath and place on a baking tray lined with baking paper. Cover and set in a warm place for 45 minutes, or until doubled in size.
- Preheat the oven to 200 C and place on the bottom an empty pan. Before placing the rolls in the oven, add 1 cup of boiled water to the heated pan in the oven (to add steam during baking)
- Spoon the onion mixture on top of each roll, spray with a bit of water and sprinkle poppy seeds and salt on the onion mixture.
- Bake for 20-25 minutes or until golden brown.
Serve warm and ENJOY!
