BEANS & TOMATO STEW – can be served with allmost anything

This stew, where the basics are black beans / kidney beans in toamato sauce, can be served in many different ways. When I make it, I make a big portion and keep some in the freezer. Then it is easy to  heat it and serve with rice or mashed potatoes. This portion is for 4-5 persons.


Ingredients:

- 1 big onion choped into small pieces
- 1 green pepper choped into small pieces (or a red)
- 4 cloves of garlic, choped
- 1 red chilli
- 1-2 tablespoons of consentraded tomato puree
- 600 g. choped tomatoes / can with the same amount
- 1-2 teaspoons of cumin
- 1/2 – 1 teaspoon chilli powder
- 1/4 – 1/2 teaspoon cayenne pepper
- 1-2 teaspoon sugar
- 1 big tablespoon of consentrated tomato puree
- 600 g precooked black beans or kidneybeans
- salt & pepper


Instructions:

- cook the beans if you have not bought cans.
- chop all the vegestables.
- fry onions, carlic and chilli for a few minutes, until soft.
- add tomato puree, cook for a minute and add the choped tomates, all the spices and a litle sugar.
- cook on low heat for 15 minutes.  Then add the beans and cook another 5 minutes.
- add salt, pepper, more spices and sugar if you like.
