I meant to post this in the morning but I had to sort of divide my morning time for preparing breakfast for my kids (yes, they don't fast), then at the same time coming online tuning into witness chat on Steemit Ramble channel on Discord, although I couldn't be on air anyways as kids around was equal to so much noise from them, then after that so many things to do that I decided to post Shout Out Saturday instead, when I had the time to sit down π
But now here I am, after a couple of hours nap ππ€£ππ€£
Day 3 of 30 Days of Indonesia, friends, and last night I made dessert called kolak.
There are so many varieties of kolak out there, with banana, cassava, sweet potato, yams, etc. It always consists coconut milk and palm sugar syrup to sweeten it.
What kolak I will be sharing now? It's toddy palm fruit kolak.
What the hell is toddy palm fruit, TKF?
It's the edible jelly seeds of wine palm (Borassus flabellifer), yes, with this palm, some people do produce alcoholic beverage, like wine.
Toddy palm fruit sometimes can be soft, but most of the time rather chewy.
Kolak itself most of the time is served hot/warm, but my following recipe, is cold kolak! π So, the following dessert is called Es Kolak Kolang Kaling - *kolang-kaling is toddy palm fruit in Indonesian, while es is ice.
It is suuuuper simple to make, but it's a good drink-dessert, especially for hot sunny summer days.
Let's see how I made it!
ingredients
- 1 can of toddy palm fruits in heavy syrup, drain from syrup but do not rinse
- 1 can of coconut milk
- 1 screwpine leaf, tied in knot
- 75 g coconut palm sugar
- generous pinch of salt
- ice cubes, for serving, optional
how to
- place everything but toddy palm fruit in a pot, being to boil until sugar is dissolved
- add in toddy palm fruit and let it boil for another 5 mins
- cool to room temperature then chill, until ready to serve
- add ice cubes just before serving

Aku semalam bikin Es Kolak Kolang Kaling. Dimakan hangat layaknya kolak sih tentu enak, tapiiiii kalau puasa pas Summer gini, serasa puasa di Indonesia, panas, gerah, keringatan, super haus π Jadiii yah enak dingin2 kan π
Nih resepnya, cara aku buat nih es kolak yang sangat mudah, sederhana, tapi cukup jos π
bahan
- 1 kaleng kolang-kaling siap pakai, tiriskan
- 1 kaleng santan siap pakai
- 75 g gula semut (palm suiker)
- sejumput garam
- 1 daun pandan, ikat
cara membuat
- campur seluruh bahan dalam panci, kecuali kolang-kaling
- didihkan hingga gula larut
- masukkan kolang-kaling dan biarkan medidih kembali, 5 menit
- dinginkan suhu ruangan, baru masukkan ke kulkas
- sajikan dingin dan kalau mau, tambahkan es batu
