Sauté it for one minute and then add the basil and some chopped walnuts. Don't forget to sprinkle some salt and pepper. You are ready with your sauce
Arugula Gnocchi Soufflé
Put water to boil with some salt and butter.
Chiffonade ( stack the leaves, roll them tightly and slice perpendicular to the roll) your arugula.

When the water is boiling, add the aragula and the flour. Stir firmly with a wooden spoon, adding the eggs one at a time.

Put some more water to boil.
Urge the mixture into the pastry bag and cut the tip (adjust your cut according to your desired gnocchi's size!)
Watch this video for more details:
Use a spoon to cut the dough so that you form each gnocchi letting them fall into the boiling water (from time to time wet your spoon so that the pasta wont glue). When your gnocchi float, take them out with a slotted spoon and put them in a bowl with cold water to interrupt the cooking (so that you can eat them 'Al dente').
Mix them with your sauce and you are ready!
Bon Appétit!
