Welcome to the 4th Act of FOOD DIARIES!
Today i will be showing you a very quick and easy recipe of a famous Moroccan sweet and world famous
BAKLAVA
Baklava is a rich and sweet dessert made of layers of phyllo leaves with chopped nuts. Then it is sweetened and held together with honey.
It is a characteristic of the cuisines of the Levant, the Caucasus, Balkans, Maghreb, and of Central and West Asia.
As my wife is Moroccan, I got the opportunity to taste the real traditional one! She also used some KUNAFA dough along with phyllo.
I hope you guys will enjoy the recipe and try it at your place!
If you have any questions, please do let me know!
LET'S GET STARTED
So basically for this one there is no recipe as such! You will need same quantity of chopped roasted pistachio and roasted cashew, honey , melted butter and cinnamon powder for the filling.
Add butter, cinnamon powder and honey to the chopped nuts to the a wet and sticky nuts filling - see small ball in picture
After that you will need Phyllo leaves , Kunafa dough and melted butter.
Take 2 phyllo leaves, brush with butter and stick them together. Add more butter like below.
Take a long stick (like wooden skewer) and roll it with plastic film. It must be longer than the phyllo leaves. You will use it for rolling the BAKLAVA later on.
Put the plastified stick on the buttered phyllo leaves and turn over to cover the stick as shown below.
Place the nuts mixture in a line on the phyllo leaves.
Here is a closer shot for you to understand it better.
With the help of the stick, roll firmly to get something like that.
Here is a better view for you!!!
Next push firmly on the roll with your hands and make it crumble!
You will get this result!
Take out the stick with precaution and put the roll on the baking tray! Cut it right away in the desired size before cooking.
Apply some more butter and it will look like this.
This is what we did with the kunafa dough! Lay the dough on a plate and apply melted butter.
Roll the dough on a wooden stick to give it a nice form.
Take it out from the wooden stick and press to get nice bird nest like form! Stuff it with the nuts mixture above.
Put on the baking tray and cook for 20 minutes at 170 degrees till golden and crispy.
It will be like this after cooking. You can add further chopped nuts and honey on top! Chill and serve!
Shame that i could not find the final photo of the kunafa, but i will update once i have it!
Try it at home and i am sure you will just love it!
