You think you can’t live without cheese? Good news: You don’t have to! Even as a vegan 😋 There are so many healthy plant-based alternatives out there and I want to show you one of my favorites: Cashew Mozzarella. This recipe is super easy and you only need 6 ingredients 💚
Prep time: 4 hrs
Portions: 1 loaf
Ingredients
- 400 ml of water
- 2 tbsp Psyllium husks
- 100 g cashews
- 2 tbsp nutritional yeast flakes
- juice of 1 lemon
- Your favorite spices (salt, chili, pepper, paprika, herbs of your choice)
Instructions
- Let the psyllium husks soak in water for at least 2 hours.
- Soak the cashews for at least 2 hours (or over night).
- Put the psyllium husk “pudding” into a blender and add the drained cashews, nutriotional yeast and the spices.
- Blend for 3 to 4minutes at highest speed until a thick cheesy consistency.
- Put the mass into a bowl and store it in the fridge for at least 2 hours, even better over night, so it can get firm.
- Tip the „cheese“ out oft he bowl (upside down) and cut into pieces.
