How to Make Low Fat Coleslaw! How To: Weekly contest by @artgirl

Ah yes, this is a fine example of working with what you have. Substitution is the word of the day.

This is my entry to the How To contest.

I decided to make coleslaw some time ago to go with the Chicken Adobo for lunch, however we didn’t have any mayonnaise in the house or any refined sugar at the time. We also didn’t have any cabbages but I had a Chinese cabbage so I figured that’d work, plus some other replacement for the mayo and sugar.

Since I’ve never mixed/created any coleslaw before and we didn’t have any mayonnaise, instead of experimenting (as is my usual style) I researched online about coleslaw for a bit, and after reading all those coleslaw related things I finally created my first home made coleslaw! Yeah!

As it turns out, if you use the low fat cream cheese spread, and supposedly the brown sugar as well, you get a healthier and low fat coleslaw side dish too! Isn’t that something?

Wanna try making some? Here’s how you can do it, @artgirl style!

Ingredients:

• 1/2 small carrot
• 3 – 4 leaves of Chinese Cabbage
• 2 heaping tbsp low fat soft cream cheese
• 1/4 regular onion
• 1 1/2 tablespoon apple cider vinegar
• 1 rounded tbsp brown sugar
• 1 tbsp water
• Salt and ground pepper to taste

Steps:
  1. Using a knife, finely shred the cabbage and mince the carrot (or finely chopped is fine).
  2. Finely chop the onion (or mince it if you prefer).
  3. Combine prepared chinese cabbage, carrot and onion in a bowl.

  4. In another bowl, combine remaining ingredients to make the dressing. Mix well. (You can use a hand/egg mixer if you want to make it easier.)

5 . Pour slaw (the mixed veggie salad) over dressing mixture or vice versa. Mix and chill for an hour or two until ready to serve, or serve immediately.

Serves 1 – 2, I guess, haven’t really measured it yet but probably depends on how much you’d like to eat.
