I really feel like dancing when I hear those songs, it is pure summer and joy!! Hope you will join me;) This song is also a reflection of my mood and mind today, I really just want to celebrate life, and share this crazy delicious cookie dough recipe with you guys!

If you are a fan of cookie dough, than give this a try! I made a caramel version and one with chocolate taste, both were so good and I have made them several times the past few days. Sometimes a new recipe turns out amazing already from the first try, sometimes I need to work on it 2 or 3 times before I am 100% happy with the result, but this cookie dough recipe turned out amazing already after the first try!

Never tried a vegan cookie dough? Now it is time to make your own!

I made those 2 cookie dough versions with legumes, one with chickpeas, and one with white beans. Both are filled with a lot of proteins and nutrients. This is of course a great tip if you have children, to sneak in some legumes or veggies in sweet treats, because you cant taste them, but you get the nutrients from it.

My cookie dough recipe is:

  • gluten free
  • refined sugar free
  • high of protein
  • filled with healthy carbs and nutrients
  • a healthy treat for kids
  • satisfying when you are craving for something sweet
  • pure bliss!

White Chocolate Caramel & Chocolate Cookie Dough

I love to eat my cookie dough with fresh organic berries, and the season just started here in Europe, so I buy them whenever I can!

If you want a sweeter cookie dough, you can add some melted chocolate to the cookie dough, or coconut blossom syrup.

Recipe

Ingredients:

  • 185 g chickepeas or white beans (cook your own legumes after soaking them. This way you can avoid the salt and preservatives in the canned legumes.)
  • 75 g chopped and pitted dates (use the juicy once, or soak them for 30 minutes before use.)
  • 1 tbsp nut butter (natural and unsalted. I made my own cashew butter for those jars, but any nut butter works!)
  • 1 tbsp coconut blossom syrup (or maple syrup if you cant get any coconut blossom syrup where you live)
  • 1 tbsp coconut butter
  • 2 tbsp cacao for the chocolate version (or add 1 tbsp melted chocolate and 1 tbsp cacao)
  • pinch vanilla

Method:

  • Melt the coconut butter in a water bath, than add all the ingredients, also the coconut butter in a high speed blender or a food processor:

  • Blend until smooth. It takes some minutes, so be patient and continue until the cookie dough is completely smooth.

  • For the white caramel version, do the same, only let out the chocolate or cacao. When needed, add a little more coconut blossom syrup to the dough.

  • Serve with fresh berries and drizzle some coconut blossom syrup or melted chocolate on the cookie dough! Enjoy:)

  • Note: for one jar, use this recipe above, for 2 jars, double the recipe.

Of course you can also make some kind of cake with this cookie dough, simply press it out in a mold, top with berries or fruits, and enjoy it that way. Or eat directly out of the blender if you cant wait for a beautiful jar.
