A green morning drink and the warming rays of the sun on a day off. A perfect way to start the day if you ask this heat and green smoothie loving girl.
Though I have nothing planned, other than going to the market, for today, I am sure it's gonna be a beautiful day. Shall we go to the beach, stay home or go for a walk in the national park?
Or maybe we'll go visit some friends and have a swim in the natural pool.... options options options.... but first things first.... green smoothie time!
I had some lovely mangoes from the garden left in the freezer. Almost gone through my stock and mango season is still so far off :( Oh well luckily there are so many other yummy fruits that will keep my belly satisfied in the morning.
PROBIOTIC OATY MANGO COCONUT LASSI
INGREDIENTS (serves 2)
2 cups fresh spinach
1Β½ cups water
Β½ cup cultured coconut yogurt
2 cups mango chunks
1 orange, peeled
ΒΌ cup rolled oats

DIRECTIONS
- Blend spinach, orange, and water until smooth. Add remaining ingredients, and blend until smooth. If the smoothie is too thick, add more water and blend again until smooth. If you have a high-speed blender you can throw in everything at once.
- Optional: Top with goji berries or other superfoods/toppings you like.
