Never heard of kimchi? Allow me to introduce you to this probiotic Korean wonder. Kimchi consists mainly of fermented vegetables and chili peppers. Although there are varieties that use other vegetables as the main ingredient, most recipes for this dish are based on cabbage.
Other ingredients include raw sugar, sea salt, ginger, spring onion, carrot, garlic, radish and lots of Korean chili powder. Up to you to experiment and find your unique, favorite kimchi flavor.
Next to housing a wide variety of essential nutrients - including vitamin A, B1, B2, B12, and , fibers, essential amino acids, selenium, calcium, iron, isothiocyanates, flavonoids, carotenoids, capsaicin, and chlorophyll - fermented foods improve bowel movement, provide a greater efficiency in digesting food and boost the immune function.
SPICED CHICKPEA WRAP WITH HOMEMADE KIMCHI
INGREDIENTS (serves 3)
6 medium wraps or tortillas
1.5 cups bok choy, chopped
2 cups cooked chickpeas
1 cup grated carrots
1/2 cup onion, chopped
4 cups packed salad greens
1.5 cups homemade kimchi
Herb mix
1 tsp cumin powder
1 tsp coriander powder
1 tsp chili powder
1 tsp paprika powder
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
Black pepper and sea salt to taste
DIRECTIONS

FOR THE WRAP
- Heat cooking oil over medium heat. Saute onion for 2-3 minutes. Stir regularly.
- Stir in chickpeas and herbs mix. Cook for 2 to 3 minutes more or until heated through. Stir regularly.
- Then add bok choy and cook until just wilted.
- Top wraps with salad greens, carrots, spiced chickpeas, and kimchi.
