Salmon, feta, cherry tomato and zoodle bowl Recipe {Low carb, gluten free}

Hey guys! How's your day going? Have you decided what to eat for dinner tonight? If not, here's a super easy and quick recipe for you: lemon garlic butter salmon with cherry tomatoes, feta cheese and zucchini noodles.

Salmon, feta, cherry tomatoes and zoodles make a healthy, fresh and amazingly delicious bowl, that comes together in just 20 minutes.

This tasty bowl is so fresh and light, packed with proteins, healthy fats and tons fo flavor, and I think I don't even have to mention, it's super HEALTHY: it's low in carbohydrates, plus gluten, nut, sugar, egg free.

Salmon Feta Zoodle Bowl

Prep time: 10 mins | Cooking time: 10 mins <4>Ingredients:
  • 2 salmon slices
  • 2 small zucchini
  • 1/2 tbsp butter
  • 1 cup cherry tomatoes, halved
  • 2 cloves of garlic, crushed
  • 1 tbsp lemon juice
  • 1/2 feta cheese
  • salt and pepper to taste

Let's get started!

  1. Cut the salmon into bite-size chunks, season with salt and pepper.
  2. In a large skillet heat the butter, add the salmon and cook for 5 minutes.
  3. Add the chopped cherry tomatoes and sauté them along the salmon.
  4. Using a spiralizer prepare the zucchini noodles.
  5. Fold in the zucchini noodles with the salmon and tomato. Cook for 2 minutes, then remove the skillet from heat.
  6. Drizzle with lemon juice and crumble the feta cheese on top of the zoodles.

Diet: keto, low carb, gluten free, nut free
