This navy bean and pumpkin soup is hearty and healthy, and it's easy to make a large amount for a crowd. It is packed with lovely plants, and our Eden Knights love it! Pumpkin has beta-carotene, vitamins A and C, and fiber. They are anti-inflammatory, antibacterial, and antiviral. Navy beans have fiber, folate, manganese, copper, phosphorous, vitamin B1, iron, and protein. The spices you choose to add to this soup add their own healthful benefits too!
